Gut Protocol Recipes
Recipe: Thai Chopped Salad
This is one of my favourite ways to pack in a ton of veggies into one meal. It's perfect for meal prep and will last up to 5 days in fridge (in fact, it gets better everyday!)
Ingredients:
3 cups chopped green cabbage
2 cups chopped purple cabbage
1 cup diced cucumber
1/2 cup sliced green onion
1 cup diced bell pepper
1 cup shredded carrots
1/2 cup chopped cilantro
1 cup air fried tofu or 1 cup cooked chicken
1/2 cup chopped roasted cashews
Dressing:
3 tbsp soy sauce
1/2 cup peanut butter
1tsp sriracha
2 tbsp rice vinegar
1tbsp lime juice
1 tbsp toasted sesame oil
1 tbsp maple syrup
1 tsp ginger
1 tsp garlic
Directions:
Chop all veggies in to small pieces
Mix with dressing
Chill
And enjoy!
Recipe: Banana Apple Muffins
These muffins pack a hearty punch and are a great addition to any protein filled breakfast!
Ingredients
2 large eggs, lightly beaten
1 cup mashed ripe banana
1 tbsp unsalted butter, melted
1½ cups almond flour
¾ tsp baking soda, gluten free
1 dash sea salt (or Himalayan salt)
½ cup chopped apple (approx. ¾ medium apple)
Directions
Preheat oven to 350° F. Line muffin pan with nine muffin liners and light coat with spray. Set aside.
Combine eggs, banana, and butter in a medium bowl; mix well. Set aside.
Combine almond flour, baking soda, and salt in a medium bowl; mix well. Add almond flour mixture to egg mixture; mix until just blended.
Divide batter evenly between prepare muffin cups, 3/4 full (approx. 1/4 cup).
Bake for 18-22 minutes, or until golden brown and toothpick inserted into the centre comes out clean. Transfer muffins to rack, cool.
Makes 9 servings.
